It all depends... If i understand your question, then:
A: you want to use EEPROM out of old equipment. As long as its not the reason you car audio stopped working, it should be ok. EEPROM has a certain lifespan of read/write cycles and depending on how many times its been written too, it might not last much longer.
B: to use your EEPROM, you would have to get the numbers off the top of the chip, and google it until ou find the datasheets. they will tell you everything you ever need to know about that particular EEPROM.
C: Same as B. Get the numbers off of the chip, and look it up online.
