Well, how many I/O's do you need? How many ADC's, How many Comparators? Do you need Comms? What's the User interface? How many Buttons, What kind of Display? Once you've got a handle on what you need to do, then, and only then, you can go pick a PIC. PS, Solar for electricity isn't going to work in the UK. The losses and costs exceed any potential gains.
