PT100 to SHT75

Hi,

I have a system which controls the refrigeration, heating, and fogging systems. The system will read the humidity through dry and wet sensor (PT100). If I decide to replace these sensors with sht75 humidity sensor and keep the same controller, what would be the followed procedure to convert the reading value of sht75 into variable resister .

i took a look to the digital potentiometer i found out that it does not satisfy the required resoluation ( accuracy ? ) to be replaced with PT100 >

any body can help me in this point >
