I need to build a liquid level sensor using conductance probes that will be exposed to both fresh and saltwater environments. I am thinking of using a small isolation transformer to feed an ac signal to the probes in order to avoid corrosion from electrolysis. Is there any other way to isolate the probes? I would like to avoid using an isolation transformer… any ideas?

Hi,

No need any transformer if you use AC ...

but may be you should use some capacitive measurements ... you could have totally isolated and protected probes ... ;)
