This may seem like an odd question but I'm going to ask anyway.

I'm using the I2C line of EEProm on a project. The size is stated in bits. The question I have is, do they really mean bits or do they mean bytes? On a few occasions I have seen the term bit used interchangeably for byte.

If it is truly, bits they are referring to then:

64K bit = 8K byte

Yes, it's bits... so divide by eight for bytes...
